White Green Thai Eggplant

I bought these from my local Thai shop to try out and I have to say I am very impressed. They are about the size of golf balls with a smooth skin. I made a thai curry (recipe on Robyns Recipes) and they worked very well, they absorb all the flavours of the curry and soften beautifully. The lovely Thai lady in the shop said they're an essential part of the Thai Green Curry. They are similar to the british eggplant (aubergine) without the slimly texture, personally they're much nicer :) Well worth a try!
